Raspberry Gin Fizz1 ½ oz gin
1 ½ oz fresh grapefruit juice
1 ½ oz raspberry simple syrup
1 egg white
Tonic water to top off
Fresh raspberry for garnish

Add the gin, grapefruit juice, raspberry simple syrup and egg white to a cocktail shaker. Dry shake (meaning shake without ice) for 20 seconds, then add ice and shake well for an additional 20 seconds.

Strain the cocktail into a chilled glass and top with tonic water.

Garnish and enjoy.

For the simple syrup –

1 cup Water
1 cup Granulated sugar (white sugar)
1 cup Fresh or frozen raspberries (approx. 170g)
1 tbsp lime juice

Add water, sugar, and raspberries, and lime juice to a small saucepan.

Bring to a boil over medium-high heat, stirring until the sugar is completely dissolved.

Reduce heat to low and let it simmer for 5 additional minutes. Remove from heat and allow to cool.

Strain the mixture through a fine-mesh sieve into a clean jar, pressing on the solids to extract as much liquid as possible.

Seal and store in the refrigerator for up to 2 weeks.
