Virgin Margarita

2 teaspoons kosher salt
1 teaspoon organic granulated sugar
½ teaspoon chile powder
Wedge of lime
2 oz jalapeno simple syrup (recipe follows)
1 ½ oz fresh squeezed lime juice
Chilled Tonic water or grapefruit flavored sparkling water

Fore the simple syrup-

Place 1 cup of honey or Agave nectar along with 1 cup of water into a small saucepan.

Roughly slice a medium sized jalapeno pepper and add it to the pan along with half of a bunch (around 1 cup loose) of cilantro. (No need to chop and do use the stems.)

Bring to a boil and boil for 2 minutes exactly. Remove from the heat and allow to cool to room temp. Then strain into a jar and refrigerate for up to 2 weeks. *This makes enough for about 6 cocktails.

To make the cocktail-

Stir together the sugar, salt, and chile powder, then place on a small plate. Rub the wedge of lime on the rim of a rocks glass or margarita glass, then dip the rim onto the plate of the salt mixture.

Combine the measured amount of simple syrup and lime juice in a cocktail shaker filled with ice. Shake several times to chill, then pour into your glass. Top with 4 oz of tonic or sparkling water.

Garnish with a lime wedge or jalapeno slice. Enjoy!
