Sunshine Summer Old Fashioned

½ oz pomegranate simple syrup
2 ½ oz sunshine juice *(see our recipe for morning sunshine juice)
1 ½ oz bourbon (subsitute tonic and lime or lemon for a mocktail version )
Club soda, to taste

To make the simple syrup, place equal parts pomegranate juice (unsweetened) and granulated sugar in a pan over high heat. Bring to a boil and continue to boil for 2 minutes. Remove from the heat and let cool to room temperature. Store in the fridge for up to 2 weeks.

Place the simple syrup, sunshine juice, and bourbon in a cocktail shaker with ice. Shake for approximately 10-15 seconds. Pour into a cocktail glass filled with fresh ice and top with club soda.
