Strawberry Gin and Tonic

1 oz gin, or non alcoholic spirit such as Hooghoudt
1 oz strawberry simple syrup, chilled, recipe follows
Juice of ½ – 1 whole lime
3-4 oz tonic water, chilled

Strawberry Simple Syrup

250 g strawberries (½ lb)
1 cup water
1 cup sugar

Place all syrup ingredients into a saucepan. Bring to a boil then reduce to a simmer and let cook for 2-3 minutes until strawberries Skim off any foam that rises to the top. Optionally, strain the syrup through a mesh sieve making sure not to press down the strawberries.

Leave the syrup to cool to room temperature then move to the fridge and wait at least an hour to chill. Store for up to 2 weeks.

For the Cocktail

Place 1 oz of the strawberry simple syrup into the bottom of a cocktail glass filled with ice. Ad 1 oz of gin and desired amount of fresh lime juice. Shake until the top of the cocktail shaker is chilled. Pour into a glass and finish with chilled tonic water.
