
1 cup oat flour
4 large eggs
1 tsp kosher salt
2 tsp baking powder
Seltzer or Club Soda, to thin
2-3 Tbsp Butter for the pan
¾ cup blueberries or other seasonal fruit, such as peaches, apples, or cherries.
Place all ingredients in a food processor or blender and blend until smooth. If the batter is not thin enough to pour off of a ladle, then add some club soda to thin it out. We usually add around 3 tablespoons or so.
Preheat the oven to 400F, and place either a 10 inch cast iron pan, or 4-6 individual pans inside to preheat for at least 15 minutes.
Remove and add the butter to the pan to melt, followed by the berries /fruit. Pour the batter over the fruit and place in the oven for approximately 15 minutes, or until puffed and golden brown.
Serve immediately with maple syrup (we also love some mascarpone).
